Yup, ok I am a huge Potterhead, and if you have been following me for a while this may have been exemplified a number of times in my baking. But this year (2021) I am fortunate enough to be part of a group of bakers on Instagram that will be making a Harry Potter cake once a month until the end of the year! That’s a whole lot of Harry Potter cakes! This cake design goes out to all the Gryffindors out there!
Of course, I wanted the flavour of my cake to match my design so I created this Butter Beer cake based on my Butter Beer cocktail! This cocktail was super popular when I used to host Harry Potter Bingo at Sweet Spirits, and turning it into a cake yielded amazing results! This cake is melt in your mouth fantastic. I made the mistake of making it too small….it didn’t last long on the counter in this house! I highly recommend this recipe even if you aren’t a Harry Potter fan like myself. It is super easy to make (all in one bowl). The flavour is sweet butterscotch and is a sure crowd-pleaser.
I am super happy with how my little sorting hat turned out. He is modelled out of fondant and shaded with food colouring. My lion is just a little toy lion that I spray painted gold.
I know this cake doesn’t look super appealing, especially with that red icing running down the cake, but I promise you it is super delicious!

Harry Potter butter beer cake.pdf
The Recipe
Ingredients
- 1 2/3 cup of flour
- 1 1/3 cup of sugar
- 2 tsp baking powder
- 1 tsp kosher salt
- 1 tblsp butterscotch jello powder
- 1/2 tsp cinnamon
- 3/4 cup clear cream soda
- 1/3 cup of vegetable oil
- 1 tsp pure vanilla extract
- 1 egg
- 2/3 cup of water
Instructions
Step 1
Preheat oven to 350F and prepare your pans. (Line bottoms with parchment paper and spray pans with baking oil)
Step 2
In a large bowl whisk together the dry ingredients.
Step 3
Add the cream soda and mix until combined (it will be thick).
Step 4
Add the remaining ingredients. Whisk until nice and smooth.
Step 5
Add to your prepared baking pans and bake for 30 to 35 minutes, or until an inserted toothpick comes out clean.
(wait for your cake to cool before adding icing)
Butterscotch Frosting
Ingredients
- 1 cup of butter (at room temperature or softened)
- 1 tsp pure vanilla extract
- 1/4 cup of whipping cream
- 1/2 cup of butterscotch chips
- 3 1/2 cups of icing sugar
Instructions
Step 1
Add butter to a mixer with the whisk attachment. Cream slightly until broken down. Add vanilla and mix with butter.
Step 2
In a microwaveable safe dish, microwave your whipping cream until extremely hot (bubbling). Pour over your butterscotch chips and leave for about a minute for the cream to begin melting the butterscotch. Then mix, the chips will gradually melt to becomes a ganache consistency.
Step 3
With the mixer on low, pour the butterscotch ganache into the bowl with the butter and vanilla.
Step 4
Add the icing sugar one cup at a time, making sure the previous addition is fully combined before adding the next. Once fully added, whip on medium-high speed until the frosting is light and fluffy.
Step 5
If your cakes are cool, frost your cakes!
